Jaffy also must accommodate a clientele that prefers seafood from the north. At least half of the fish at Florida's Finest comes from cold waters. "Smell these scallops," says Jaffy, opening a vacuum-packed vat of giant translucent mollusks. "Smell how fresh they are." They were from New England.

Scallops and lobsters are on just about every seafood restaurant menu in town for $25 to $35 a pound. Jaffy thinks that's reasonable. "The U.S. is a dumping ground for fish because we won't pay top dollar, like they do in Europe and Japan," he says. That we're looking for a deal is what allows unethical vendors to pump past-prime fish with preservatives and food coloring. It's what allows vendors to pass off tilapia as yellowfin.

And it's tolerated not just by consumers but by the government.

Jaffy tries to stay away from doctored fish. At the stainless-steel table in the walk-in, a man in overalls places his gloved hand on a tuna flank. He expertly dissects the flesh. It smells like the sea. "Look at those veins and that hue," he says of the fish, reeled in by a local boat. "It's a beautiful tuna."

One of the most useful tips that I got from a friend was to install a restaurant camera. He recommended a webcam software called GotoCamera www.gotocamera.com This is how it works - Set up a webcam near to your cash counter or any part of your restaurant which you wish to monitor, download the GotoCamera software. The set-up instructions are pretty simple and easy to follow. The best part is that you can access it from your smart phone so that you can remotely monitor your camera's recordings when you are away from your restaurant.

Didn't know about this law. Being transferred from Long Island, we thought we would be enjoying more local fish at an affordable price. However, the opposite is true. Difficult to find local fish at an affordable price! In the supermarket almost all fish is imported. We usually purchase our fish at Wholefoods or a local trusted fish market, but the prices are high (I understand why now!) so we don't eat as much fish as we did when we lived on Long Island where the fish was local right off the boat and much less expensive! How can this situation be fixed?

What we need are a herd of taxpayer funded state inspectors armed with a law making it a felony to sell mis labeled fish cruising around in all the restaurants.  The more inspectors and the harsher the laws, the better.

That way, dummies who insist on buying their fish cheap won't eat pollock and think they are getting something trendy.  And that will cost everybody who eats seafood an extra $3 per meal.

Or you get educated so you can tell the difference, eat at quality restaurants and send back any mis-labeled crap.  This costs nothing to anybody.  Dummies who think they can get fancy fish cheap are the legitimate prey of tourist traps.

I will never knowingly order tilapia. Have I ever eaten it? Probably! You kind of have to know in advance what restos to order fish entrees from and which ones not to.

Ya pays for what ya gets, if yur lucky.   As per usual, quality and cost are sacrificed on the liberal altar of safety and mindless regulation.
