Every year around this time -- and this year on Thursday specifically -- New Times gathers the finest, oldest, and newest local restaurants and asks them to offer a signature dish. It is then paired with a wine carefully selected by the proprietor of boutique wine shop Wine Watch. This year, more than 40 local dining establishments will be represented. Sample dishes from Rok:Brgr, Bimini Boatyard, Salt Seven, and more. Even Gelato Petrini will be there serving cool desserts to cleanse the palate. Whether you're a longtime Florida foodie or new on the scene, Pairings is the place to be Thursday night. The fifth-annual New Times Pairings is strictly 21 and over, so none of those annoying minipeople will be running around to spoil your good time. General admission costs $50 online (until noon Thursday) or $60 at the door. A VIP pass costs $90 online or $100 at the door and gets you in an hour early, a larger wine glass for gratuitous sampling, and admission to the VIP lounge, where you'll find comfortable seating and some specially selected food and wine pairings. For a full listing of restaurants and to buy advance tickets, visit browardpalmbeach.com/pairings/2012.
