You know how there’s never quite enough salsa at the party? How, after a while, people take the crushed, stale tortillas that lie scattered around the cute bowl and try their damnedest to pick up the little salsa remains. That will not happen at this party, amigos. Here’s the scoop: From noon to 4 p.m., Pollo Tropical at 19500 NW 27th Ave. in Miami Gardens, directly across the street from Sun Life Stadium, will host a family-friendly tailgate party. At this monumental fiesta, they’ll mix up a batch of salsa big enough to feed a thousand hungry linebackers in an attempt to shatter a standing world record. In addition to the 600 pounds of salsa, this tasty affair will feature live music, food samplings, and lots of games and prizes. The extra coating on your stomach?
