The truck belongs to Miami Beach's Sakaya Kitchen, a sort of pan-Asian fusion izakaya where French technique and local ingredients bring the slow foodish aspirations of chef Richard Hales into focus. The
dark-gray truck with graffiti scrawled all over the sides recently
began hitting the streets in Coral Gables and at festivals all across
Miami-Dade County. It merges exotic Asian ingredients (Korean ssamjang,
kimchi. crispy duck, pork loin) with traditional fast-food presentation
-- a perfect example is the Korean-spice pulled pork sandwich with
kimchi "slaw."
