Darbster in Boca Raton, a spawn off of the comfortable waterfront eatery in West Palm Beach, is proof that eating vegan can be fun. Executive chef Seth Kirshbaum (Sublime, Da Francesco) leverages a host of meat and dairy substitutes to make a wide-ranging menu of delicious vegan treats. Take the restaurant's Buffalo "wings": The delicately fried wedges use Gardein (a vegetable protein) to create a juicy, tender bite accented by dairy-free wing sauce and faux blue-cheese dip. The house palm cake made from shredded hearts of palm and crusted by panko bread crumbs is a huge hit, either on a sandwich or dabbed with pine nut aioli. While the fare is health-oriented don’t be afraid to augment the experience with a trip through the affordable wine and beer list -- hey, it’s all about balance.
