Blue Willy's Barbecue Market in Pompano Beach is a re-creation of the 1950s Texas butcher shops whose owners realized there was more money to be made from smoking and slicing meat than selling it raw by the pound. Owner Will Banks should know -- his grandfather owned a shop on the outskirts of Dallas. Banks' barbecue market holds true to those traditions, serving tender, fall-apart brisket and juicy, baby back ribs on red-brown butcher paper. Along with the dry-rubbed, slow-smoked meats, you can enjoy classic barbecue sides like coleslaw, smoky-sweet collard greens, and mac and cheese -- all on communal tables in a dining room wrapped in exposed brick and corrugated cardboard. There is no table service, so be patient when waiting in line. It may earn you an extra rib or a heap of pulled pork.
