Chef Lamberto Valdez – Mexican-born, French-schooled, and a former Ritz-Carlton executive chef – is trying to do something rather poetic at his suburban Lake Worth El Chamol: use classic Mexican ingredients – cactus paddles and huitlacoche among the most exotic – and pair them in interesting ways with seafood and European-accented characters such as puff pastry or risotto. Voilé! you might say: A new fusion is born. Sometimes Valdez’s team fancies work, sometimes they don’t, but the mood and spirit of the place can make up for occasional lapses in culinary execution. Homemade salsas, guacamole, inexpensive margaritas, fajitas, and burritos share the bill with chicken-stuffed puff pastries and lobster-huitlacoche ravioli. - Gail Shepherd
