No. 13: Tomato Bisque en Croute From Jimmy's Bistro

Few dishes out there can make an entire restaurant of people collectively snap their heads around like rubberneckers on I-95 and maintain that first impression once tasted.

But that's precisely the effect that Jimmy Mills' tomato bisque en croute has when it

emerges from the kitchen of his cozy Delray Beach bistro. The soup

itself is served in a pristine white bowl encased in a crisp-crusted

balloon of puff pastry, airy and light and speckled with sea salt and

cracked pepper. You take your spoon and bust through gorgeous layer of

pastry, and it's like opening a present. Waves of tomato, fresh basil,

and Parmigiana drift out to greet you. Once you do take a bite, you can

taste everything in the dish distinctly: garlic, white wine, ripe

tomato, and floral herbs. On it's own, the bisque would be truly

special, but it's the presentation that makes it an event.
