No. 68: Wheat Ciabatta from Gran Forno
The whole-grains trend has produced a lot of bad wheat pastas and breads, but the folks at Gran Forno have figured out how to use whole grains to make a great ciabatta. The outsides are perfectly crusty, while the inside is light and airy, ready to soak up oil and vinegar or to be sliced lengthwise and become a panini. Best of all, it's wheat, so there's none of that bleached-wheat guilt.
