Chef Roy Villacrusis is quickly gaining a reputation as the pop-up king of South Florida. The poster chef for ADD seems to have a new concept restaurant opening every week -- which makes us happy beyond comprehension.
Fresh on the tails of his pop-up dinner with chef Eric Grutka this past Sunday, Villacrusis is launching his new pop-up restaurant, Chef Roy's Studio, at Bangkok O-Cha (2062 Palm Beach Lakes Blvd.) in West Palm Beach.
The pop-up will serve multiple-course tasting menus three days a week, with each dinner offering 15 to 20 small courses created by Villacrusis.
Chef Roy's Studio will open July 5 for its first dinner service and will be open Thursday to Saturday evenings for dinner through late July. After that, Chef Roy's Studio will be open Tuesday to Saturday evenings through the fall.
Villacrusis told Clean Plate Charlie that the menu is completely
ingredient-driven. That also drives the price of the dinners, which
will be either $88 or $100, based on the products the chef chooses that evening. "Every evening's dinner is all based on the market
and what I get," said Villacrusis.
Think of it as a dinner stock
exchange. The chef is also planning smaller tasting menus with fewer
courses (and lower prices) on Tuesday and Wednesday evenings.
