If a bowl filled with gluten-free cilantro noodles, sesame-marinated tofu, balsamic glazed mushrooms, and maple-roasted butternut squash sounds like the perfect "healthy" meal, now you can create a dish just like it — or another using dozens of other nutrient-rich ingredients, at newly opened Bolay in Royal Palm Beach.

A new fast-casual concept created by Outback co-founder Tim Gannon, Bolay is all about bowls; specifically, create-your-own bowls. Together, Gannon and his son, Chris, say they wanted to provide a place that offered a fast-food approach to fresh, nutritious, and — most important — customizable meals.

A former protégé of Wolfgang Puck, executive chef Martin Oswald helped to curate Bolay’s menu using ingredients that allow diners to blend spices and flavors representative of cultures around the world. The goal, he says, was not only to create delicious, healthy foods that help to cleanse and nourish the body, but to also offer a new range of flavors to the fast-casual model.

In case you haven't figured it out by now, Bolay is all about bowls. You can start by choosing a "small" or "big" bowl (a small gets you one of each ingredient station offered, while a big one gets you two of each). No matter which ingredients you go with, each bowl is guaranteed to be packed with nutrient-rich super foods and responsibly sourced proteins, says Oswald.

Guests have the option of selecting from nearly 20 different ingredients starting with proteins like lemon chicken, Caribbean-spiced steak, ahi tuna, or sesame-marinated tofu. From there, bowl "bases" offer vegetable and grain-based options including Peruvian quinoa, marinated kale and currant salad, black rice, or gluten-free cilantro noodles.

Many ingredients are vegetarian, says Oswald, while still others provide vegan and gluten-free options.

To top it off, guests can choose from an assortment of sauces like cilantro pesto, spicy Thai, and lemongrass tamari, among others. Bolay also offers a few sides: add-ons like minted tomatoes, goat cheese crumbles, and Parmesan cheese. The restaurant also offers a number of cold-pressed fruit and vegetable-based juices, infused teas, as well as wine and beer on tap.

"We've innovated the build-your-own-bowl experience," says Tim. "And are catering to discerning, health-conscious guests."
