A new fast-casual concept created by Outback co-founder Tim Gannon, Bolay is all about bowls; specifically, create-your-own bowls. Together, Gannon and his son, Chris, say they wanted to provide a place that offered a fast-food approach to fresh, nutritious, and — most important — customizable meals.

Guests have the option of selecting from nearly 20 different ingredients starting with proteins like lemon chicken, Caribbean-spiced steak, ahi tuna, or sesame-marinated tofu. From there, bowl "bases" offer vegetable and grain-based options including Peruvian quinoa, marinated kale and currant salad, black rice, or gluten-free cilantro noodles.
Many ingredients are vegetarian, says Oswald, while still others provide vegan and gluten-free options.
To top it off, guests can choose from an assortment of sauces like cilantro pesto, spicy Thai, and lemongrass tamari, among others. Bolay also offers a few sides: add-ons like minted tomatoes, goat cheese crumbles, and Parmesan cheese. The restaurant also offers a number of cold-pressed fruit and vegetable-based juices, infused teas, as well as wine and beer on tap.
"We've innovated the build-your-own-bowl experience," says Tim. "And are catering to discerning, health-conscious guests."
