The Hollywood dining scene seems as fragile as ever; a perfect illustration is the abrupt departure of tropically inspired Ginger Bay Café, which received good reviews. But perhaps Burt's on the Beach (101 N. Ocean Dr., Hollywood) can shore things up. Set to open in May, the oceanside eatery is proprietor Burt Rapoport's first venture after dissolving his 20-year partnership with dining guru Dennis Max. The 20,000-square-foot space will feature blond wood floors and sand-hued chairs; a tiki bar with Caribbean-inspired cocktails; and an American-Caribbean menu ranging from a beer-battered grouper sandwich on Cuban bread to a coconut-curry chicken entrée. We can only hope this particular Caribbean eatery doesn't also ride on the tide -- in with Ginger Bay, out with Ginger Bay, in with Burt's on the Beach….
