Charismatic sushi chef and scenester Takeshi Kamioka will unveil his new restaurant in Wilton Manors this Thursday: Gaysha New World Sushi, an ambitious project that's a fusion of style and sustenance. Thursday night marks the christening, with DJ Mikey from Radio-Active Records spinning.
In the months leading up to the opening, the sushi chef's Facebook page has been a chronicle of passion,
frustration, and anticipation as he scouts for the build-out, awaits
permits, test-drives menu items, and exuberantly freaks out in the
process.
Kamioka says he'll feature "raw, organic, cuisine" but no hot items "or anything that bastardizes Asian cuisine." While sushi and edamame will be menu mainstays, he hopes to build a clientele that expects omakase. "Whether I shop at a Peruvian place, stumble upon a Spanish grocery, or find some interesting Italian spices, I hope to infuse my findings into that menu."
Clean Plate Charlie peeked in the other day around 5 p.m. to find lights out and an interior that's
nearly ready to go, despite that the listed number for Gaysha is not yet accepting
calls. (Neither is the restaurant accepting credit cards yet, so bring cash.)
Kamioka's former restaurant, Shizen on Las Olas Boulevard, had closed because of building renovations. "Gaysha is a similar concept as Shizen without the full kitchen," he said. "Expect the same kind of creativity."
