This Thursday, July 21, Smith will school you on more important matters like, among other things, how to prepare the perfect skirt steak with grilled avocado and chimichurri. Take notes! Smith moved from his organic farm roots in Indiana to Miami, where he attended culinary school at Johnson & Wales University. His résumé boasts experience as the Chef de Cuisine at a host of Miami restaurants, including Pearl, the Biltmore Hotel, and Table 8, before landing in Fort Lauderdale at the W Hotel's Steak 954 restaurant.
On Thursday, at 6:30 p.m. at the Publix Apron's Cooking School in Plantation, Smith will give a cooking demonstration of a few summer-friendly dishes.
Items on Smith's menu include:
Yellowfin Tuna Tacos with Chipotle Aioli, Avocado Salad, Iceberg, and
Pickled Jalapeños; Roasted Beet Salad with Mixed Greens, Pine Nuts,
Sherry Vinaigrette, and French Feta; Grilled Skirt Steak with Grilled
Avocado, Chimichurri, and Yucca Frites; Gourmet Ice Cream Sandwiches.
The Publix Apron's Cooking School offers a variety of low-cost
culinary classes for kids, teens, and adults. Each month, the school
invites local chefs to give cooking demonstrations, basic
skills classes, technique courses (beginner to advanced), and other
specialty courses.
