Gluten-Free Thanksgiving: Q&A With Author of 101 Gluten-Free Microwave Mug Cakes

Thanksgiving dinner, with its mounds of stuffing, handfuls of cranberry sauce, and gobs of turkey, sounds absolutely delicious -- doesn't it? But that meal can post a serious threat to celiacs because many of the dishes contain gluten. 


Stacey Miller, author of 101 Recipes for Gluten-Free Microwave Mug Cakes, decided that dessert could be the easy exception. In six months, she created a slew of easy, one-serving desserts that you can make in the microwave. Now on this holiest of food holidays, celiacs don't have to hog stove space.

We got on the phone with Miller, a Rachael Ray Show veteran, and she answered our burning questions.




New Times: So... are you a celiac?


Stacey Miller: I'm not, but I like the trend of doing something that's better for you than what's traditionally done, so I try to cut back on gluten.

How did you go about baking gluten-free if you knew nothing about it?

All the recipes are original, so I did a lot of research and became an expert on gluten-free baking. I outfitted my pantry with the gluten-free ingredients I wanted. A year ago, I wrote 101 Recipes for Microwave Mug Cakes, but I just came up with 101 new ones, and I like these better. 

How long did it take to come up with all of those recipes?

It took six months from "I've never baked anything gluten-free" to "I've got it; I know how to do this." It was six glorious months.

What was it like being on the Rachael Ray Show?

It was really cool. My day job is promoting books, so I'm an independent book specialist whose mission is to

get people international book opportunities. This was the first time I was lucky

to get someone on the RR Show, and it just happened to be me. I almost felt guilty about it.
