Lime Fresh Mexican Grill -- the Tex-Mex, fast-casual restaurant that launched in Miami Beach -- will expand into Palm Beach County early next year. The new location will be the growing chain's first Palm Beach County restaurant, set to open next spring.

Lime Fresh has secured a location in Boca Raton's Shadowwood Square, a 2,000-square-foot space in the shopping center at 9789 Glades Road. The restaurant will join neighboring tenants Stein Mart, Bed Bath & Beyond, Old Navy, and Regal Cinema.
"Lime is a fabulous addition to Shadowwood and to the west Boca market, which doesn't have all that many options for a quick, freshly made restaurant meal," said India Turkell, a representative for Terranova Commercial.
In 2004, Lime Fresh founder John Kunkel designed a concept for fresh Mexican. His vision was to pair the vibrant and food-conscious culture of South Beach with reinvented Mexican fare. His first restaurant, located off Alton Road, became a local hot spot for a taste of burritos like the South Beach burrito, a low-carb tortilla filled with chicken, jack and cheddar cheeses, pico de gallo salsa, and shredded lettuce.
Lime quickly grew to 16 locations before it was bought by national chain Ruby Tuesday in 2012. Today, it operates 18 locations in Florida, ten additional restaurants nationwide, and two in Chile.
