Palm Beach County's Next Nanobrewery Coming to Boca Raton With Prosperity Brewers

A new nanobrewery is headed for Boca Raton later this year. 

Parkland residents Dominick Peri and Ken Gross are planning on a January launch for Prosperity Brewers located in the Roc Urban Community Spaces and set amid the up-and-coming Boca Water Tower art and design district.

The one-barrel brew house is located inside a 2,400-square-foot warehouse bay, 900 feet of which have been fashioned into a tasting room and lounge area. But this won't be a fancy production facility, nor will it sport massive brewing equipment capable of local distribution.

Instead, Peri and Gross say they want to focus on making quality small-batch brews that rotate often. The idea is similar to LauderAle in Fort Lauderdale and Devour Brewing Co. in Boynton Beach, both of which also began brewing on a one-barrel system. 
"We brew our beers to be super creative, super unique, and fun," said Peri. "Our goal isn't to grow too big or too fast. Right now, we're just focused on making good beer and offering people a cool place to come hang out."

The plan is to brew a number of styles that will allow them to offer a diverse range of constantly rotating recipes from 15 taps. That includes the brewery's core profiles currently slated with an IPA, double IPA, hefeweizen, wit, English mild, and saison. With more than a dozen wine and liquor barrels already in-house, the duo also plans to launch an in-house aging program immediately.

Peri and Gross decided to go into the beer business thanks to a combined love and passion for the growing craft beer scene. Peri is no stranger to the industry; he worked for Nantucket-based Cisco Brewers from 2011 to 2014 as their sales rep with his newly formed Grape to Grain sales and marketing company focused on independent producers representing the brewery in the Southeast market, a position that inspired him to become involved in the craft beer movement. In 2014 he signed on to sell beers for Left Coast Brewing Co. in San Clemente.

"It turned me onto beer, and through my travels I was excited to bring something back here to South Florida," said Peri, who teamed up with his longtime friend to launch Prosperity Brewers.
While Peri does some home brewing, the duo has brought on local brewer Cameron Donisi as head brewer. Donisi previously worked as taproom manager at Bangin' Banjo Brewing Co. in Pompano Beach and learned to home brew while serving patrons at places like World of Beer in Coconut Creek and Inkwell Pub in Margate.

Down the road, Peri and Gross hope the brewery will also serve as a creative space for the area's locally-based home brewers to showcase their best beers, or those who simply want to see what it's like to brew their best recipes using professional equipment.

While a majority of the output would be available for the brewer to bottle or keg, the wish is that each would allot a certain amount to also be sold on tap at Prosperity for patrons to sample and give feedback. The idea is similar to the Master Brewer Academy slated to launch later this year in Miami, where people who want to learn to brew can utilize various breweries across South Florida.

If you're eager for a taste of their brews before the grand opening slated for early 2017, possibly in January, you can stop by the Prosperity Brewers tent during the 2016 New Times Original Beerfest October 22, where they'll be pouring a sour saison, a vanilla white oak English mild (or a pumpkin brûlée English mild), a bourbon-oak-aged American strong ale (or coffee coconut American strong ale), and a kölsch.

"You know when people say, 'This is a passion project'? That's what this is for us," said Peri. "Both Dominick and I are passionate about craft beer and helping to grow the community here in Palm Beach County."
