Roy Villacrusis and Lindsay Autry are teaming up for a two-night pop-up dinner series at Chef Corp Cook's Studio in Palm Beach Gardens on Sunday, May 20 and Monday, May 21.

The five-course Sunday supper and Monday "Leftovers" dinners, which will have the same menu both days, will feature ingredients from local farmers and purveyors.  According to co-chef Villacrusis, the menu will be "dictated mostly by

what we can get in the local markets, so even though we have a layout in

our thoughts, it will be finished only a few days before the dinner".

Villacrusis said he met Autry while he was putting together his Ultimate Chef's dinner at the Four Seasons. The former executive chef at Michelle Bernstein's at the Omphoy, declined an invitation to participate in the event, and Villacrusis didn't know why until he saw her on Top Chef. 

They met again at a Swank Farms luncheon and realized they were both passionate about using fresh, local ingredients and looking to experiment with pop-up dinners while shopping around for more permanent kitchens. They agreed that the space at Chef's Corp Cook Studios was the best venue for a joint pop-up and started making plans.




The meal will begin with Hors d'oeuvres for guests at 7 p.m., followed

by a five-course dinner featuring Florida ingredients. Courses will

alternate between being plated and served family-style.  Wines, included

with the dinner, will be poured by a local purveyor.

The dinner is $115

per person (including tax and gratuity) and is limited to 60 guests per

What's next on the agenda for these two rising culinary stars?  Look out

for more pop-ups for both, including an underground sushi concept in

West Palm Beach by former Kapow Noodle Bar chef Villacrusis. We couldn't get much from the secretive

chef (isn't that what makes these pop-ups fun?), but he did mention that

he's working on his own take on traditional omakase dining...and

promises no tempura, teriyaki, or wacky rolls on the menu. We'll keep you posted!
