Savory roasted eggplant is infused with spices and made creamy at Woodlands, a Southern Indian restaurant in Lauderhill that serves only vegetarian dishes. Its baingan is spicy and smooth, like baba gannouj that grew a backbone. It's best when served over a bit of rice and scooped up in Woodland's naan bread, puffy and light and full of yeasty, fresh-baked flavor. The eggplant -- like most other dishes at Woodlands -- costs only about $7.
