No. 20: Bouillabaisse from Café de France

There are reasons certain dishes have lasted hundreds of years when yesterday's hot new foodie trend is colder than a winter morning in Buffalo. For one, they just taste really good.

For another, they don't require an advanced culinary degree to prepare

or appreciate. For a third, they utilize the bounty of their area of

origin but can be adapted to the tastes and products of almost anyplace

else. Which brings us to bouillabaisse, more specifically, the

bouillabaisse at Olivier Le Gloahec's chic little ice cream

parlor-turned-ravishing French bistro. It's less the rustic Provencal

fish stew created by local fisherfolk to use not-so-commercial "trash"

fish but a delicate tomato-burnished, saffron-tinged broth that holds a

school of precisely cooked clams, mussels, grouper and shrimp. It can

make even that cold winter morning in Buffalo seem like summer in South

Beach.
