No. 33: Crostini with Whipped Lardo, Rosemary, and Balsamic Onions at Pizzeria Oceano

Few marvels of salume impress as deeply as lardo, a delectable section of pork fat that's cured with rosemary and salt. Before the Fat Police go all Hawaii Five-O on us at the 

prospect of eating cured pork fat, know this: While American food scientists have demonized animal fat as the main cause of heart disease and a plethora of other diet-related illnesses over the past 30 years, the truth is the Italian, French, and plenty of other cultures have been eating ethically-produced versions of it for centuries with little ill effect. You want to know what I'm scared of? Processed foods, high fructose corn syrup, and a lifetime without lardo, particularly the fluffy, whipped stuff turned out at Lantana's Pizzeria Oceano. Like all the other ingredients at this boutique pizzeria, this lardo is thoughtfully sourced and treated with the utmost dignity, enhanced only by a bit of fresh rosemary from the garden and a smattering of balsamic caramelized onions. The whole shebang is treated like a fancy schmear, which is to say dabbed on a brusque bit of crostini, also made fresh daily at the restaurant. Feel that? That's a happy -- and healthy -- heart.
