No. 44: Tuna Tartar from Canyon Southwestern Cafe




At Canyon Southwestern Cafe -- a long-time celebrated Fort Lauderdale eatery -- it's difficult to go wrong with any of the first courses ranging from Indonesian spiced bison with blueberry crema to slow braised pork empanada. But a favorite often seen in the center of guests tables is the tuna tartar.

Arranged in a cylindrical tower, finely chopped cubes of succulent tuna are tossed with a secret blend of spices and oil.  There are no chunks of vegetable or seed in this dish, only the clean, silky smooth texture of tuna. Use some of the paper-thin fried tortilla to add a crispy bite or simply dip spoonfuls of the luxurious fish into the decorative lines of wasabi aioli and Thai chili sauce.
