February marks the month of many celebrations, from the significant (Black History Month, Library Lovers Month, National Condom Month) to the less-so but equally mentionable (Return Your Shopping Carts to the Supermarket Month, Marijuana Awareness Month, and National Wedding Month.)

For foodies, buried in the middle of all of these honors, you'll find Florida Strawberry Month. It's often outshined by the gleam of the Florida citrus Industry, but the strawberry is still considered the most popular berry fruit in the world. Now as we close in on the end of the month, Johnson and Wales University's Chef Alan Bergman shares some strawberry-centric recipes to create. Not to worry if you miss the February deadline; the season lasts through April.

Strawberry and Raspberry Pudding

Serves 4

2 lbs Cleaned and fresh slice strawberries

10 0z fresh raspberries

2 0z sugar

8 0z raspberry puree

10 slices white bread crust removed and cut ribbons

4 ramekins or a muffin tin

Mix berries sugar and ½ purees. Line ramekins with sliced bread, leaving no gaps. Save

one piece for top and press tight. Fill with berries mixture, add other half of puree into

each ramekin. Place top and press tight. Refrigerate for three days remove from ramekin

Buy turning over on a plate. Serve with whip cream.


Toasted Pound Cake and Balsamic Strawberries with chocolate Sauce

Ingredients serve 4

4 slices of pound cake sliced ½ inch

1 lb Strawberries washed cored and sliced

½ oz Balsamic vinegar

3 tablespoons Granulated Sugar

1 oz chocolate sauce

Place cleaned and sliced strawberries in a bowl add sugar and mix. Add more sugar if

needed. Add balsamic vinegar and mix. Chill for 3 hours. Toast pound cake untill golden

brown and warm. Mix berries and spoon over pound cake. Drizzle chocolate sauce and serve.
