Christmas Leftovers Recipe: Ham and Cheese Casserole

The holidays may be over but my stomach would never know. Right now my fridge is packed with tupperware and foil covered plates full of leftovers. Every year my mom divides the leftovers and I get sent home with a good week’s worth of food. Now don’t get me wrong — I’m not complaining about leaving with pounds of honey baked ham, cheesy mashed potatoes and all the fixings. What I am complaining about is having to eat the same exact thing every day. 
I am not one to waste anything (especially good food) so after eating plate after plate of the same thing last year, it took me months to be able to even look at another potato. I won’t let that happen again this year. 

Cut up the ham into bite sized pieces. The ham can always be substituted for turkey or chicken, if that’s what you have on hand. 
Mix together the cut up ham, mashed potatoes and vegetables. I did a little digging around in my fridge and found some shredded cheese, half an onion and a couple cloves of garlic so I threw those in too. 
One of the good things about cooking with leftovers is you don’t have to worry about re-heating anything since you are just going to stick it in the oven anyways. 

Top with more cheesy goodness and pop it in the oven on 350 for about 15 minutes. 
Now comes the hard part: waiting!
