No. 18: Whole Wheat Tagliatelle with Shrimp and Asparagus from Vic & Angelo’s

Most pastas are like French-kissing your sister. They’re better than nothing but they don’t really satisfy. This pasta really satisfies.

At the Delray Beach branch of David Manero’s contemporary

Italian-American trattoria, long strands of nutty-tasting tagliatelle

(meaning “to cut,” from the region of Emilia-Romagna) are paired with

plump, thumb-sized shrimp, coins of al dente asparagus and sweet little

cherry tomatoes, then tossed with olive oil inflamed with hot chilies

and plenty of garlic. It’s a riot of flavors in your mouth, yet no

single one overwhelms the others, a hallmark of properly prepared

Italian cuisine. It’s also a lot more satisfying than French-kissing

your sister. And she’d probably like it too.
