Combine: Two cups of leftover mashed potatoes with five eggs and a handful of flour
Sear: Both sides of the pancakes in a pan with butter until they’re golden
brown.
Fry: A sunny-side-up egg
Serve: Cover the bottom of the plate with heated marinara, add pancake, top with egg. Optional: sprinkle with Parmesan
