It's not often you find a graduate of the Culinary Institute of America running a mobile vending truck, unless you're ordering from the "gourmet restaurant on wheels" parked across the street from the Broward County Courthouse (216 SE Sixth St., Fort Lauderdale, 954-779-7337). That's how chef-proprietor Adam Schneid describes his Red Ball Espresso operation. So much more than a hot dog cart -- though you can get a chili dog deluxe -- the Red Ball offers hot lunches like garlic chicken teriyaki and gyro wraps, and a variety of sandwiches, salads, muffins, bagels, yogurt, and fruit smoothies. The Red Ball, which is named for the trucking operation that delivered supplies to American troops during World War II, also caters office parties and luncheons. Just don't call it a "roach coach." "We have hot and cold running water, and I wash my hands when I work," Schneid says.
