In Japan, dining out is all about choice; restaurants are known to specialize in just one thing. They make food with a singular — almost narrow-minded focus — preparing just one specialty dish to the best of their abilities. That's the idea behind GoBistro in downtown Hollywood, an Asian-inspired eatery from Amazing Asian Bistro partners and chefs Andrew Gong, Joao Da Silva, and Niti Masintapan. Their dream: to open a series of ramen houses across South Florida. Wannabe ramen connoisseurs will rejoice in the fledgling concept, which has a menu focusing on three things: yakitori, sushi, and ramen. Here, the tonkotsu ramen delivers with a meaty kotteri broth packed with emulsified fat from long-boiled bones, tender slices of melt-in-your-mouth pork belly, and an egg with molten gold yolk on the verge of oozy.
