Troy Thomas and mom Pat roll out on their flame-engulfed truck once again. After hours of prep time, including marinating chicken in Thomas' specialty jerk seasoning for five to six hours, it's time to get The Rolling Stove to the roundup and set up for dinner service.

The finished product is worth the effort because that slow marinating of meat makes for some delicious and decadent meals.

Slow cooked jerk chicken is pulled and served on Texas toast with grilled onions ($6.95). That same jerk marinade can be found in the form of jerk wings ($6.95 for one pound of wings) and a sloppy jerk (though it sounds like an old boyfriend, its a spicy take on the sloppy Joe, also $6.95).

In a field of burgers, The Rolling Stove burger ($6.95) stands on its own. Seven ounces of ground steak is cooked to order on the truck. It's then topped with grilled or fried onions, cheddar, house sauce and mayonaise. On a whimsical note, try Troy's own Cap'n Crunch chicken sandwich and fingers. The cereal of your childhood makes an excellent fried chicken batter (who knew?). Worry about your waistline tommorow, for tonight you feast.

 

Visit Troy at The Rolling Stove tonight at The Seminole Hard Rock Hotel & Casino's weekly food truck event. From 5:30 - 10:00 p.m., eat from Miami's best food trucks while enjoying free parking, live music and a movie under the stars.

 Trucks serving dinner tonight include: Aaron's Catering Express, CheeseMe, Daddy's Grill, Dim Ssam a Gogo, Dolci Peccati Gelato, The Fish Box, The Flying Saucer, gastroPod, Grillmaster Cafe, Jefe's Fish Taco, Latin Burger, Latin House Grill, Mr. Good Stuff, Ms. Cheezious, The Red Koi, El Rey de las Fritas, The Rolling Stove, Tree House Truck (from Orlando), and Yellow Submarine.
