100 Favorite Dishes: No. 56 -- Black & Blue Oysters From Shuck-N-Dive

No. 56: Black & Blue Oysters from Shuck-N-Dive

Fresh-shucked oysters are lightly blackened, topped with blue cheese, and finished under the broiler. The end result is incredible -- the oysters are slightly cooked but they maintain their lushness, and any trace of fishiness or unappealing texture is gone. The spices combined with the sharp blue cheese provides a punch of flavor, and altogether we think these are capable of converting even the strongest oyster-haters out there.

You may also opt to try the "Oysters 3 Ways," where you can try two of each (also including the classic Rockefeller and Bienville, made with shrimp and bacon), but we're hard-pressed to give up our full-order of Black & Blues. In fact, we usually put in two orders at a time.
