No. 25: Swordfish Carpaccio at D'Angelo

D'Angelo, the latest restaurant from Fort Lauderdale's poppa of Italian cooking, Angelo

Elia, showcases wonderful ingredients prepared simply. The tapas-style

bar stocks imported Italian products like stracchino and taleggio

cheeses, Amalfi lemon, Sicilian tuna, and some of the finest speck

around. But nowhere is this love affair with simplicity more profound

than in the restaurant's spada -- swordfish carpaccio sliced so wispy

thin it nearly dissolves on the plate. The drape of buttery-soft flesh,

minerally and vibrant, is sprinkled with fresh thyme leaves and

drizzled with olive oil. A salad of thin-shaved fennel lightly spritzed

with orange juice gives the plate a sweet, citrusy tang.
