No. 4: Gyu San
But there's nothing boring about Roy Villacrusis's meaty métier. Dubbed Gyu San, it's three different cuts of Wagyu beef, prepared and garnished with a nod to three different Asian cultures. Deeply flavorful short ribs get the Korean bulgoki treatment with a side of kimchee. Equally savory skirt steak is basted with teriyaki sauce and presented with oshinko, a type of makizushi made with daikon. And top loin is marinated Philippines-style, called inihaw, and delivered with pickled vegetables. Even Og would like it.
