When it comes to barbecue, most people know the big names of the South. There's Texas' slow-cooked ribs, Kansas City's wood-smoked meats, Memphis' wet-and-dry ribs, and the Carolinas' famous pulled pork.

Next month, look for a new kind of 'cue -- specifically Mississippi-style barbecue -- with the grand opening of newcomer Sweet Dewey's BBQ in Boca Raton.

The "authentic Mississippi barbecue" restaurant, located on West Glades Road in Boca Raton, is set to open in early December. It's owned and operated by chef Dwayne Hooper.

A Chicago native, Hooper -- called "Dewey" by his friends -- said he will be re-creating family recipes from his Mississippi-raised mother and grandparents. The fast-casual concept will have dine-in, carryout, and catering available. The menu will also focus on lighter-style fare and has a children's section.

Look for Hooper's favorites: barbecue veal brisket, beef brisket, beef ribs, baby back ribs, St. Louis-style ribs, Southern-fried catfish, and rotisserie chicken for entrées and platters. Options like cedar plank salmon, veggie burgers, cilantro lime Quinoa salad, veggie couscous salad, and organic grilled veggie sandwiches will deliver lighter eats.

Like any good barbecue joint, the sides are almost as important and the main meal; here you'll get a variety of salads and sandwiches, turkey chili, soups, and desserts. Side dishes like mac and cheese casserole, collard greens, red beans and rice, corn on the cob, and corn bread present some additional Southern favorites, said Hooper. The restaurant will also serve wine and beer and will be open daily from 11:30 a.m. to 10 p.m.

Hooper is a graduate of the Washburne Culinary Institute in Chicago and has lived in South Florida for 27 years, starting as a chef in Boca Raton's Casa Vecchia, La Vielle Maison, and Down Under. He spent nine years at the Polo Club, and 15 more years at Saint Andrews Country Club, where he was famous for his weekly "chicken and ribs night."
