Chef Julien Greaves Leaves Tryst for Idaho

South Florida is full of transplants. There are so many northern migrants that it's almost a shock to find out someone was actually born here.

It's not surprising, really. Mild winters, awesome sunshine, and a relatively laid-back vibe make it hard to leave, whether you're one of the ten or so born and bred residents or an expat from the north.

Much-loved Delray Beach chef Julien Greaves of Tryst recently chose to go the opposite direction; he left sunny South Florida to head to greener pastures in America's heartland, just outside Boise, Idaho.

Greaves left Tryst in the beginning of the summer to take over as chef de cuisine at the beautiful Whitetail Private Country Club in McCall, Idaho, about two hours north of Boise.

We know what you're thinking: Why would anyone leave South Florida for the middle of nowhere?

According to Greaves, he made the change for his kids.

"I left for greener pastures for my children," he said. "South Florida was not my ideal schooling district; I was also not fond of the blistering heat and socioeconomic climate."

In an interview with Clean Plate Charlie last year, Greaves told us that he was smitten with the friendly people and outdoor lifestyle of the Boise area.

"We can't wait to go skiing and snowmobiling in the winter," said Greaves. "I have already seen a bear, kayaked on the beautiful lake, and bought a 4x4 Bronco to go offroading. I miss all of my Florida people but have zero regrets moving here -- it really is paradise!"

The Shore Lodge and Whitetail Golf Club where he works are owned by Albertson's Supermarket heir Joe Scott. Scott owns a number of other resorts and a NASCAR team as well.

Wayne Alcaide has taken over the reins at Tryst. In the past, he has spent time working at WaterColor Inn and Resort, Michael Mina's Nobhill at the MGM Grand, 32 East, and James Beard Award-winning chef Chris Hasting's Hot and Hot Fish Club. He is currently working toward opening a new location with Tryst partner Butch Johnson in Pompano Beach. We will keep you updated on details as we find out more.
