Meet Hell's Kitchen Winner Paul Niedermann, Executive Chef at Hudson at Waterway East

Delray Beach's newest waterfront restaurant, Hudson at Waterway East, has undergone some changes in recent months. The most recent update: the culinary team recently welcomed newly appointed celebrity chef Paul Niedermann to redesign the menu.

Niedermann is best known for his Season 9 win in 2012 on Fox's Hell's Kitchen.

The 31-year-old chef brings with him extensive experience and expertise in a variety of cuisines, ranging from refined French to homey Italian. Before joining Hudson, Niedermann worked his way up the ranks with some of South Florida and New York City's most prestigious hotel restaurants, including the Biltmore Hotel, St. Regis, Ritz Carlton’s Via Luna, and BLT Steak in New York City and the Hamptons.

At Hudson, Niedermann says he is already promoting the restaurant's motto, "Love Thy Craft," by creating a menu of new signature dishes that use innovative cooking techniques and creative, cutting edge flavor profiles. 

"It’s about really putting my DNA on the menu," says Niedermann. "It’s also about integrating as many locally-sourced products as possible, and creating seasonality in South Florida, where normally there is none."

Newly debuted lunch items include appetizer options like olive oil poached shrimp, PEI mussels and watermelon and tomato gazpacho; salads like chicken paillard or burrata; flatbreads with carne asada or fig and goat cheese; sandwiches including a French Dip and Maine lobster club; and entrees such as roasted local snapper, grilled skirt steak and a Delmonico ribeye.

Guests interested in trying new dishes are invited to dine at Hudson on Wednesday, June 10 for a meet-and-greet with Niedermann from noon to 8 p.m., when the chef will unveil the restaurant's new dinner menu. Hudson is located 900 East Atlantic Ave., Delray Beach.
