While most of today's versions are candy-sweet, served in fishbowls, and made with enough cheap sour mix to preserve just about anything, the true classic version of this drink is worth celebrating. Especially later this week on Cinco de Mayo.

At its most basic, a good margarita should be a perfect balance of sweet and tart, contain just the right amount of good tequila, and pair well with the South Florida heat.

Luckily, no matter how you like yours - on the rocks, frozen, with or without salt, or fruit-infused - Broward and Palm Beach are full of worthy options.

Here are the eight best margaritas you'll find from West Palm Beach to Hollywood.

9. Rocco's Tacos

When May 5 rolls around this year — known to many as Cinco de Drinko — you know what that means at Rocco's Tacos. It's tequila time. With five locations in South Florida and one in Orlando, Rocco’s Tacos is one of the top places to celebrate this special Mexican-inspired drinking holiday in South Florida. Although the bar offers a variety of flavored and specialty margaritas served on the rocks or frozen, right now you can also walk into any Florida Rocco’s Tacos and find the hemp-and-pistachio-flavored Myschyf margarita, a blend of Herradura silver tequila and fresh-squeezed lime juice spiked with the new liqueur created by a duo of South Florida nightlife industry professionals.

On Wednesday, the Boynton Beach Casa Linda location sells frozen and on-the-rocks margaritas for 99 cents (all day long with the purchase of a meal priced $8.95 or more). Casa Linda's 10-month-old sister location in Lake Worth offers the same deal every Tuesday. According to co-owner Mirna Contreras-Benitez, the restaurant's margarita mix is made using her recipe with a sour mix made fresh daily. On an average Wednesday, each restaurant will sell more than 350 drinks throughout the day. 

7. Brimstone Woodfire Grill

At Brimstone in Pembroke Pines, the outside bar offers the perfect spot to sit back and relax, drink in hand; under the shade of a large patio awning — a roaming area cooled by dozens of fans and offering a variety of lounging options — you can enjoy a variety of beverages. The best choice, however, is the margarita flight created by beverage manager Jodi Patten, four four-ounce drinks that include the house pineapple mango, strawberry, blood orange, and classic margarita made with Casamigos tequila.

Once available in one flavor, these days margaritas come in a rainbow of variations. While some can be a real treat, others are like the modern-day equivalent of a sour-apple martini: unbalanced and cloyingly sweet. The South Florida Mexican chain dubbed Los Tacos offers its margaritas with a wide range of indigenous Mexican ingredients, available frozen or on the rocks. That includes the house tamarind-, mango-, or lychee-flavored options blended with fresh fruit purées. 

5. The Feisty Bull

The progressive Mexican restaurant the Feisty Bull in Coral Springs from restaurateur Luigi Carvelli has delivered a Mexican-Spanish fusion concept. The restaurant and bar offer a Latin-inspired menu, and that — of course — includes some pretty damned good margaritas. Served by the glass or pitcher, and available in a rainbow of fruits like smoky peach or raspberry pineapple (pictured here), they're some of the best around.

4. Margaritaville Hollywood Beach

The brand's fifth resort opened its doors in October, welcoming patrons eager to kick off the sandals and soak up the South Florida sun — and down a few margaritas. And they'll be doing it in style: The Hollywood Beach Margaritaville grounds include 349 rooms, a state-of-the-art spa with 11 private treatment rooms, 30,000 square feet of flexible office space, and three pools with a custom-built FlowRider, what stands as the most expansive waterscape you'll find at any Margaritaville resort. You can enjoy all this with a famous Margaritaville margarita in hand. A menu offers literally dozens of versions, including the Uptown, the resort's most upmarket margarita made with Margaritaville gold tequila and Cointreau orange liqueur and topped with a Gran Gala float.

3. Canyon

At longtime Fort Lauderdale restaurant Canyon, chef-owner Chris Wilber has been making his famous prickly pear margarita long before it was fashionable to do so. It's been the bar's signature drink since the restaurant opened in 1994, a bright pink drink served on the rocks with a salt rim, or up for a simple martini-style cocktail. It looks so simple, but it's actually a lot of work; every few days the restaurant receives a wooden crate of ripe prickly pears that's mixed into small-batch containers with the house Sauza Hornitos tequila. From there it sits for several days, long enough for the cactus fruits to bleed their purplish-pink juice and sweet, exotic flavor. Here, it's good to be a lady: They get their drinks extra-cheap during happy hour, when most — including the prickly pear margarita — are half-price from 5:30 to 8 p.m. Sunday through Friday.

2. Tacocraft

Visit Tacocraft in Fort Lauderdale's Himmarshee Village this coming Monday and you can celebrate Cinco de Mayo with the restaurant's handcrafted margaritas. That includes the Black Diamond (pictured here), a mix of Deleon reposado, black cherry puree, simple syrup, and fresh lime juice in a Black Sea salt-rimmed glass. Feeling extra fancy? The Platinum is made with Casa Noble crystal, Patron Citronge orange liqueur, and the house-made sour mix. Or grab the classic — made with Espolon tequila, lime juice, and agave — on Monday from 8 p.m. to close for $6, or Friday through Sunday when they're two-for-one from midnight to 2 a.m. (and served alongside $3 tacos).

Let's face it: Pretty much every day is a good excuse to drink margaritas at El Camino. On Monday you can get their $3 classic margaritas all day long. Named New Times' 2014 Best Margarita, it's the perfect balance of Corazon blanco tequila and fresh-squeezed lime juice, sweetened with agave and — the secret ingredient — livened up with a dash of house-made lime bitters. Feeling fancy? You can get any of the specialty margaritas for $10-$12, including a coconut-pineapple, watermelon-jalapeño, blueberry-mint, spicy avocado, or the chili-guava (pictured here).
