Che Restaurant Establishes Flagship Location at Former Hudson Space in Delray Beach

A new European-based restaurant is headed for South Florida later this summer.

Che, an established concept with 15 locations in Spain, is headed for Palm Beach County with a spacious waterfront location in the space formerly occupied by Hudson at Waterway East.

According to brother-and-sister cofounders Martin and Daniela Sujoy, the International concept will establish what they are calling the brand's flagship U.S. location at 900 E. Atlantic Ave. in the heart of downtown Delray Beach.

Che — a ubiquitous term that loosely translates to "friend" in Argentina — was founded 30 years ago by Martin and Daniela's parents in their hometown of Buenos Aires. In 2001, the siblings opened the first Che restaurant in Spain. Currently, the Sujoy family owns and operates more than a dozen Che concepts of varying styles throughout the country, including spinoffs Che American Style, Che Pizza & Pasta, Che Grill House, Che Ristorante Italiano, Che Asador Argentino, and Che Express.

The new U.S. version of Che will boast an 8,000-square-foot, custom-designed space by Paco Pleguezuelos Interiorista. When complete, the establishment will seat 280, with abundant indoor and outdoor dining as well as two indoor-outdoor bars.

"We are constantly evolving and challenging ourselves and always saw the U.S. as our next market," says Martin. "We’re thrilled to finally see that dream becoming a reality in a fabulous location in the heart of South Florida."

Stateside, Che Delray Beach will have a unique identity while offering the restaurant's signature blend that is one-part global cuisine and one-part Argentinian steakhouse. As a result, the siblings say the newest location will spotlight cuisine from its Spain-based sister establishments.

"We tailor our menus to appeal to our different demographics, always taking our location into consideration," says Martin. "Listening to our guests has been a major key in our decades of success. For Delray Beach, we want to pay homage to our Argentinian roots while highlighting European inspiration."

Although the menu is currently still in development, signature dishes likely include Pulpo a la Gallega (Galician-style octopus); authentic Spanish paella with seafood, chicken, and vegetarian options; choripan, a traditional Argentinian sandwich with chorizo and chimichurri; and a raw bar.

"While we are located on an upscale waterfront property, Che Delray Beach will be designed to be the type of restaurant for any occasion,” Daniela says.
