21. Seaweed Salad from Fusionarie Japanese Signature

While the sushi rolls and sushi bar teasers at Fusionarie Japanese Signature are more of an ostentatious delight the eye, this simply presented appetizer is beautiful in its own right; vivid green strands of seaweed are punctuated by flecks of sesame seed and nearly translucent shavings of cucumber.

Seaweed salad is often overlooked at sushi bars, passed over for more indulgent items or the ol' standby of edamame. In most cases, one would be forgiven for never giving it a second thought. But Fusionarie's clean, refreshing version -- given just a smidgen of heat from the addition of chili pepper flakes -- is the ideal start to a meal that likely will be a feast for the eyes and the stomach.
