No. 46: Spare Ribs from Troy's Bar-Be-Que
The phrase "fall off the bone" is synonymous with ribs. But the best ribs actually don't just
fall right off; they sport a combination of tenderness and meaty bite that leaves you craving more. Troy's,
a bright-red 'cue shack off of Federal Highway in Boynton Beach, serves
its ribs just that way. They're supple yet won't just fall apart when
touched. The meat is juicy and smoky with just the right amount of
texturally pleasing bark on the surface. The secret is that Troy's
doesn't smoke its ribs. Rather, it does a combination of barbecue and
grilling that works out perfectly.
