No. 28: Tiramisu from Arturo's Ristorante

Having gone from obscurity to ubiquity faster than you can say "mascarpone," this elaborate Italian confection, said to have been invented in the 1960s by any number of chefs in the Tuscan city of Treviso, has not only jumped the shark several times over but skinned and filleted the poor animal, thrown the steaks on the grill and served them with a dollop of salsa verde.

So why in the world would you want to subject yourself to one more version of this liqueur and espresso-fueled ("tiramisu" means "pick me up") culinary annoyance? Because Arturo's does it right, that's why. For example, the ladyfingers are soaked in four different liqueurs to impart even more flavor, the mascarpone is whipped with cream, egg yolks and sugar to give it an almost cloudlike consistency, then is piped rather than spread to avoid bruising the delicate pastry. Ubiquitous, sure. But delicious too.
