No. 32: Vitello Tonnato From Apicius

For some reason, the best dishes of any cuisine seem to be those that leave you shaking your head and wondering, How the hell did they come up with that?

Certainly whichever Italian cook dreamed up the idea of  gently poaching a big hunk of veal, then cooling it down, slicing it thin and serving the slices at room temperature beneath a thick, creamy, mayonnaise-like sauce flavored with preserved tuna must have had one spectacularly artful imagination. As with most such dishes, there's little room for error. Inferior ingredients, poor preparation, a lack of attention to detail and the question you'll be asking is not, How the hell did they come up with that? but, Why the hell did they come up with that? Luckily, at this rustic-elegant Lantana ristorante the ingredients (like imported Favignana tuna), preparation and attention to detail are impeccable, so the only question you'll be asking is, "Can I get another?"
