South Florida has no dearth of high-end hotels and resorts.

From beautiful oceanfront properties complete with world-class golf courses to intracoastal marina/ hotel combos to trendy retreats known for pools, spas, and parties, options abound.

At the end of December Steven Zobel, former executive chef of d.b.a./ Cafe in Fort Lauderdale is taking the reigns of the culinary program of the newly renovated Waterstone Resort & Hotel slated to open in December.

Occupying the space that once housed the Boca Raton Bridge Hotel, the Waterstone Resort will feature two restaurants on the property as well as a penthouse catering hall.

On the higher end, Boca Landing, which opens for dinner only, will offer a selection of small plates with a focus on sustainable local seafood. The farm-to-table restaurant will feature a wide range of simply prepared dishes with a rotating selection of interesting side dishes.

Expect to see shareable options like crispy Ipswich clams with pea shoots, snow peas, and charred lemon vinaigrette; sides, such as chick pea puree, succotash, and seasonal vegetables; and a full raw bar with different oysters, stone crab claws, conch, and tiers of seafood.

"I'm really excited about working with really good seafood again," said Zobel. "I can buy really fun ingredients and let them speak for themselves."

On the more casual side, Waterstone Grill will offer an all day menu serving breakfast, lunch, and dinner with a large outdoor seating area overlooking Lake Boca.

The Latin-inspired concept is slated to offer a wide range of options ranging from crab B.L.T. sandwiches and blue crab toast with sliced avocado to burgers and wraps to interesting breakfast options like chilaquiles with poached eggs.

Both restaurants will offer dock and dine services to boats and yachts visiting the marina.

While Zobel was sad to leave d.b.a., he's excited about the project and the new concept.

"It's a beautiful spot," said Zobel. "The views are incredible. There is a huge new sea wall out in the lake; boats can pull right up and order. They've done a great job with the renovation."
