Doughnut lovers, Boynton Beach's Bond & Smolders bakery has a surprise for you. As of this week, you no longer need to place a delivery order to get your hands on Nani's Dough doughnuts.
Thanks to an impromptu meeting, Delray Beach-based pastry chef phenom Nani Edry is now offering his gourmet artisan doughnuts daily at Bond & Smolders in Boynton Beach. The partnership came about after Edry asked the local bake shop if he could use its commercial kitchen to prepare for the recent Miami doughnut festival, Donuts!, which took place at Wynwood Yard on March 31.
"I needed a facility where I could make up to 1,000 doughnuts in a relatively short time frame for the festival, and after talking [with the manager], we quickly realized this could actually be something more," says Edry. "I was making doughnuts in their kitchen the very next day."
Last September, Bond & Smolders owners Patty and Ralph Smolders opened a stateside version of their European-based Dutch bakery at the corner of Federal Highway and Woolbright Road. The couple, who are currently tending to their business overseas, say they believe that working with Nani's Dough will be a natural — and mutually beneficial — partnership.
Moving forward, Edry says he hopes to collaborate with the Smolders to create custom cakes, breads, and pastries.
For now, it's just doughnuts. And if you're in the mood for any of Nani's supersized, handcrafted ones, just be sure to arrive at the bakery early. Last weekend, Edry says his first batch of 250 doughnuts sold out in less than three hours.
It could be thanks to his new and improved pastry dough, each batch prepped, baked, and fried in the Bond & Smolders humidity- and water-quality-controlled kitchen that offers the use of commercial mixing and baking equipment.
"The doughnuts are coming out even better than before. Every doughnut is frying up lighter and fluffier."
The only thing that hasn't changed is the size: mammoth four-inch-wide doughnuts priced $3 to $3.50 each. These ginormous doughnuts are stuffed with homemade fillings and finished with hand-mixed glazes and toppings, everything from a dense banana-cream pudding center to a fluffy avocado mousse glaze.
Flavors include white chocolate mocha, s'mores, cinnamon and sugar, plain glazed, pomegranate and white chocolate, red velvet cake, green Moroccan mint tea, cactus pear, and dulce de leche topped with crushed pretzel.
