No. 11: Topneck Clams on the Half Shell From Tark’s of Dania
This blue- and white-painted seafood counter has been shucking raw
frying up chicken wings, and serving cold lager
along Federal Highway since Lyndon Johnson was in office. The place is
little more than a single bar top and a chef’s line — just pull up a
stool and watch the entertainment. That, of course, would be the way
the staff lovingly banters back and forth with each other as they sling
beer and whip up orders with dramatic flair. Order a dozen clams from
the raw bar, and you’ll see why this place has been a hit so long. The
clams are fresh as can be, spurting oceanic juices as they’re cracked
in two. Their shimmering alabaster flesh is tender and toothsome, with
a briny bite and a texture so luxurious you’ll forget you’re in a clam
shack in Dania. But that setting, along with a squeeze of lemon or two,
makes these clams the best around.
