McCabe frequently makes up bourbon cocktails for one of the Mizner Park valet guys — after work, of course. “I decided to make him and Old Fashioned one night,” says McCabe, “It tends to get kind of crazy behind the bar sometimes. I accidentally grabbed strawberries instead of cherries and muddled them up. And the drink was delicious. So we decided to call it the New Fashioned.”
Kapow makes vanilla infused bourbon in-house. To get the same result split and scrape a vanilla bean pod and throw it into the Bulleit Bourbon. Add chopped apples and cinnamon sticks. Let the mixture sit for two to three weeks. Remove the apples, but hold on to them for use as a garnish. Strain. Kapow stores the bourbon infusion in oak barrels.
