No. 1: Crepas de Cuitlacoche from Eduardo de San Angel

In 1993, back when South Florida was nothing but strip malls and vast expanses of nothingness (how much has changed?), one Mexican-born chef, Eduardo Pria, 

dared to open his dream restaurant in Fort Lauderdale. That place,

Eduardo de San Angel, might've scared folks halfway to Georgia with its

assortment of exotic Mexican ingredients fused with French technique.

Instead, it slowly caught on and became a hit, and today it's still

going strong. Pria's dishes are playful, inventive, and unique all, but

his crepas de cuitlacoche are the picture of his vivid imagination.

They're made with cuitlacoche, a mushroom-like fungus that grows on

corn husks and for centuries was revered in Mexico as the food of

kings. Pria rolls the cuitlacoche along with sautéed serrano chilies

and

onions inside a traditional French crepe made with chopped ancho

chilies. Then he melts a bit of asadero on top and practically floats

this dreamy, half-ancient/half-modern concoction in a creamy,

pale-orange sauce made from squash blossoms. Tiny rounds of Puebla mole

sauce finish this heaven-scent plate and will likely finish you off as

well.
