No. 59: Fish Tacos From Tryst
A great fish taco is a lesson in balance -- savory, fried fish is paired with the crunch of fresh cabbage, the tart acidity of lime, and the cooling smoothness of crema. The synergy of flavors is not unlike how one might go about pairing food with, say, beer. It just so happens that both things are done expertly at Tryst, the Delray Beach beer and tapas bar that debuted last year and has captivated ever since. The fish tacos are nigh flawless, employing lightly battered local mahi mahi, avocado crema, and fresh flour tortillas to great effect. Paired with a crisp beer like Pinkus Organic Pilsner or an Allagash White hefeweizen, it's a combo that stands the test of time.
