No. 58: Dover Sole from French Corner Bistro & Rotisserie

In a memoir, Julia Child called sole meunière a culinary revelation in recollection of her first meal in France. And I doubt Child would be disappointed by the Dover sole meunière at French Corner Bistro & Rotisserie in West Palm Beach.

Although the dish is traditionally sautéed tableside, this eight-table bistro nestled in the corner of an unassuming strip mall is a bit small for such a production. Here, the delicate white fish is pan-fried in butter, then crusted with herbs and dashed with lemon. Use a slice of freshly made in-house baguette to swipe a dollop of brown-butter sauce and you will forget you're in a strip mall.
