Check No. 89: Coal-Oven Wings From Table 42
The city of Buffalo is known for two things. One is weather so cold and snowy that it would freeze the Botox in South Floridians' faces until they were as hard and shiny as Carrera marble. The second is the useless appendages of flightless, factory-farmed birds, fried in hot oil, doused with a butter-laden sauce fiery enough melt frozen Botox, and served with blue cheese dip and celery sticks.
Both Buffalo's weather and its iconic chicken wings could use
improvement, and Table 42 performs the second task admirably. Here the
meaty, Schwarzeneggeresque wings are roasted in a ferociously hot
coal-fired brick oven, which chars and crisps the skin while rendering
the meat tender, juicy, and just a little smoky. And instead of butter
and hot sauce and bottled blue cheese dressing, they come dressed with a
spritz of lemon juice and scatterings of fresh oregano, chives and
Parmesan. Buffalo's weather still sucks, though.
