Apeiro Kitchen & Bar, the new restaurant from chef-partner David Blonsky and South Florida restaurateur Burt Rapoport, will open this December in Boca Raton.

Those interested in getting a sneak peek at the restaurant's menu -- and an early taste of what's to come -- can sign up to participate in an exclusive pairing dinner and tasting event slated for next week.

Apeiro (Latin for "infinity") aims to go beyond the typical definition of Mediterranean cuisine, which usually translates to Italian mixed with influences from countries like Greece and Morocco to Spain and Portugal.

Blonsky -- who has worked with chefs like Top Chef contestant Fabio Vivani, Chicago's Rick Tramonto, and restaurateur Barton G. Weiss -- is planning a menu that will be broken into small plates, pastas, wood-grilled meats and fish, sandwiches, soups, and salads. Expect dishes like octopus with cranberry beans, chili, olives and aged balsamic (pictured here); spiced lamb kebabs; and wood-oven-roasted apple crostada with salted caramel and a homemade cinnamon gelato.

If you can't wait until December, a chance to try it sooner comes on Monday, November 24, when food enthusiasts can take a taste test of the restaurant's contemporary Mediterranean menu. The special pairing pop-up dinner will be hosted at Burt & Max's Bar and Grille in Delray Beach.

A five-course, prix-fixe dinner will showcase some of the menu's best flavor combinations -- fare from the Mediterranean that incorporates culinary traditions and techniques from all over the region. The menu for the one-night, preview pop-up -- complete with wine pairings -- includes a welcome reception cocktail followed by entrées like Moroccan spiced lamb ribs, linguini with forest mushrooms and truffle butter, and whole-roasted Mediterranean branzino.

Seating is limited, and tickets are priced at $60 per person (includes tax and gratuity). The dinner will take place on Monday, November 24, at 7 p.m. Burt & Max's Bar and Grille is located at 9089 W. Atlantic Ave., Delray Beach. Call 561-638-6380.
